Apple Suprise! The winning Masterchef dessert

Posted on

I have now secured the recipe for the winning dessert dish of our office Masterchef competition, as promised 🙂

If you missed the post – click here to read it. And, if your mouth watered as much as mine did for the apple slice – then here is the recipe, courtesy of my colleague and fellow Masterchef winner, Catriona.

She declares that this slice is so easy – it’s almost cheating. Give it a try for yourself 🙂

Apple Suprise!

  • 340g pkt buttercake mix
  • 1 cup desiccated coconut
  • 125g butter, melted
  • 425g can apple pieces
  • 300g sour cream
  • 1 egg, beaten
  • 1 tsp cinnamon sugar
  • Flaked almonds

Preheat the oven to 180 degrees. Grease a lamington tray and line base with baking paper, extending the paper 5cm over edge of pan.

Combine cake mix, coconut and melted butter in a medium bowl. Press mixture evenly over base of prepared pan. Cook for 15 minutes, or until lightly browned. Cool slightly.

Spread apple evenly over base.

Whisk egg and sour cream together. Spread over apple.

Sprinkle with flaked almonds and cinnamon sugar.

Cook for further 30 minutes, or until sour cream has set.

Cool in pan slightly then refrigerate overnight.

Cut the slice into fingers to serve the next day.

Just remember – everything in moderation 🙂 Stay tuned next week for my boss’ take on gluten-free raspberry cake. So delicious!!
